Tuesday morning rain is falling

It was another sleep-in kind of morning for me. I woke up to rain tapping on my windows, perfect for a restful sleep. I was pretty hungry by the time I rolled out of bed at 9:30, though. I still had some pumpkin leftover from yesterday’s pumpkin pie oatmeal, and what’s a perfect rainy day breakfast? Why, pancakes, of course- with a little twist. Since it is spring break, I had the time to make these pancakes from scratch instead of using the packaged mix. I have to say, I may never go back to the box stuff again.

Cinnamon Pumpkin Pecan Pancakes

1 serving- 5 small pancakes

1/2 cup whole wheat flour

1 tsp. baking powder

1/2 tsp. cinnamon

1/2 cup coconut milk (can substitute almond, soy, or cow’s milk here)

1/4 cup pumpkin

1 tbsp. chopped pecans

Topped with: Earth Balance and Maple Syrup

The photo doesn’t really do it justice. The pumpkin and cinnamon combo make these pancakes a perfect comfort food for a rainy winter day, and the pecans give them a nice crunch. They’re a little dense so it takes them longer to cook all the way through, but they’re worth the wait :). A cup of Trader Joe’s Coffee a Cocoa on the side made this a perfect start to my day. Although, it’s now eleven o’ clock and I’m still in my pajamas, but that’s besides the point ;).

Brad proposed to Emily (I had a gut feeling that he would)! If you saw the after show, or read gossip magazines, you probably already know that they’ve been having “problems.” But really, who can blame them? They are in the spotlight, working on a new relationship (with a child involved, nonetheless), and every Monday night for the past two months she’s had to watch him kissing other girls. It was bound to happen. Despite their rocky beginning, I am rooting for them. I am going to ignore everything the tabloids have been saying about Brad, and trust that he is a genuine guy. Emily seems like a really nice girl, and I think they’re good for each other. I think I may have gotten a little (too?) emotionally attached to this season :).

On another note, Jordan surprised me by taking the day off of work since I’m on break. He suggested that we go to Olive Garden for lunch; how could I resist that offer? I see soup, salad, and breadsticks in my very near future! For now, I should probably wash my mess of pancake dishes and get ready. I don’t think he’d appreciate bringing me to Olive Garden in my pajamas :).

    Just discovered your blog, looking forward to reading it.

    Oatmeal is always my favorite. Yes, I was hooked on the bachelor this season, hoping things will work out for them both!!

    I think I got too attached, too! 😉 I think they are adorable together. Although, she seemed to have major anxiety over their relationship, which is completely understandable in the circumstances….I just hope they can make it now that they’re “done”!

    Fave rainy day breakfast is oatmeal….which is exactly what I had this morning. 🙂

    Pancakes all the day! Except I sort of stink at making pancakes which is ironic since I love them so much! It’s be really awesome if on the next rainy day you came and made me pumpkin pancakes because they look so yummy!

    I usually never watch the Bachelor, but I totally got sucked in this season! I knew ahead that Brad was going to pick Emily and although I think she’s super sweet I was SOOOO AGAINST it! Brad doesn’t seem ready to really be a Dad, and he didn’t ever act like himself around Emily! I think he made the wrong decision, but I’m glad Chantal is happy

      Yeah, he did seem a little hesitant about being a dad. Chantal was very genuine when she left; I’m glad she didn’t resort to going on The Bachelorette, and that she found someone at home!
