A latte kind of day

I’m not usually a coffee drinker. I have tea every morning with breakfast, but after that, caffeine and I don’t meet again until my daily dose of chocolate (which is also sometimes at breakfast, or lunch or dinner, or all three, but that’s besides the point). However, sometimes that changes. I recently wrote down all of the assignments that I have left to complete before the end of the semester. There are four days left of classes, and eleven assignments in total. Oh, yay. Yesterday, my boss handed me a list of tasks to complete, 30 minutes before I was due to leave. These tasks must be completed before I return to work tomorrow. Oh, yay. Last night, we had two tornado warnings and a very loud thunderstorm. My bed sits right against two windows. Oh, yay.

So today, I’m drinking coffee.

Tall soy latte.

Oh, yay :).

Dessert in a bowl

On occasion, my mom will make a dessert that is often requested of her, which contains a graham cracker crumb crust, condensed milk, chocolate chips and coconut, all baked into bars. In fact, she made these bars on Friday, and now they are all gone.

Although the bars aren’t breakfast food, they are the kind of thing you just seem to crave in the morning anyway. I may or may not have snacked on one while making my actual breakfast on both Saturday and Sunday. So today, when I woke up and the bars were gone, I thought why not recreate them in breakfast form? Then I did :).

Dessert in a bowl

1/2 cup oats

1 cup coconut milk

Toppings:

1 tbsp. crunchy almond butter

Shredded coconut

Dark chocolate chips

Quaker Oatmeal Squares

I eyeballed it with most of the toppings. Who wants to waste a perfectly clean measuring cup when you can pour chocolate chips straight from the bag, anyway :)? The result was a chocolaty, crunchy, gooey concoction, reminiscent of the bars my mom makes.

I ate it all, and then I scraped the bowl like I do when I’m eating ice cream. I could have gone as far as to lick the bowl, but for the record, I did not :).

I will be spending the rest of my day on a crowded college campus, so this was just what I needed this dreary Monday morning. It’s almost hard to believe that I only have six days of class left before finals!

Weekend, workouts, and a winner

Where did the weekend go? Taking a break from technology can make the time fly. A lot of things can be accomplished when you aren’t staring at a screen :).

Yesterday, I spent the day with my sisters. I skipped my usual Saturday Zumba class to go shopping and out to lunch. It was worth it :). I had not been shopping (for fun) since last summer. Crazy, right? Not having an income this school year has meant not having money for clothes. I received my first stipend check from my internship this week though, and I knew it was time for me to say “yes” to a shopping spree. Of course, I had some shopping goals in mind. I knew that if I didn’t, all of my hard-earned money would be spent instead of saved. I was on a mission to find a dress or two for this summer. I have two graduations (my own- from college, and my sister’s- from high school), two bridal showers, a baby shower, and a graduation party to attend this summer. I ended up purchasing not one, but three dresses. Mission accomplished! And, all of them were on sale :).

The two on the left are from Charlotte Russe, and the one on the right is from Old Navy. The Old Navy dress also comes in black; I had to resist  buying it in both colors. Once I have secured a full time job, I may go back for the one in black :). I am still deciding which one of these to wear to graduation. I realize that no one will see it under my gown, but since I will know what I’m wearing, it matters to me :). I bought the white dress thinking that it would be cute for the bridal showers I’m attending, until my sister reminded me that it might not be the best idea to wear white to a bridal shower. Is this true? I’m in both of the weddings, so I don’t want to be a rude bridesmaid! Decisions, decisions.

This morning, I began my day with a big plate of pancakes.

Apparently all of that shopping made me hungry (a day later)? The recipe (1/2 c. flour, 1 tsp. baking powder, 1/2 tsp. cinnamon, 1/2 cup almond milk) is supposed to be the serving size for one person, but I added a 1/2 cup pumpkin and 1 tbsp. chopped walnuts, which bulked up the batter a lot. I was hungry though. No complaints, especially when topped with Earth Balance and syrup :).

I spent the rest of the day cleaning, putting away yesterday’s laundry, going for a walk with Jordan and his dogs (it was so nice outside today!), and attempting to do homework. I say attempting, because I am currently procrastinating a two page paper that is due tomorrow morning.

The simple life

Some days, I want to get rid of it all.

And get back to the simpler things in life.

When I can watch TV with my boyfriend, without checking emails.

When I can have a face-to-face conversation, instead of texting.

When I can go to the library and feel and smell the worn-out, much loved books, instead of purchasing the sterile, electronic version on my NOOK.

When I can appreciate life without worrying about whether I have enough memory, battery life, or twitter friends.

There’s more to life than technology.

Graduation Countdown

One month from today, I will officially be a college graduate! Seeing “31 Days remaining” was actually kind of comforting. I now know that I still have one month left to job search and mentally prepare myself. I only have two weeks of classes left, which makes the end feel much nearer, but I keep forgetting that I have an extra week of school for finals (I guess I block that week out), and then one week off before graduation. Lots of time to remind myself that change is good :).

Thinking about college graduation makes me remember my high school graduation. I can’t believe that was five years ago (yeah, I did the” five year plan thing” for college). Time really does fly. At this time five years ago, I was:

Preparing for prom

Everyone said going with a group of girls would be fun. What they didn’t tell me, is that I would be sitting at the table staring at a bunch of other single girls during the slow songs. Kind of makes me look forward to my future wedding day that much more, knowing that I will be dancing with the person I love :).

Finalizing my college plans

Ah, Purdue, my first home away from home. I always thought that I would graduate from Purdue (and graduating last year, for that matter). I think it’s kind of funny when employers ask you, “Where do you see yourself in five years?,” because it’s one of those things that is always bound to change (I’m not graduating from Purdue).

High school me, at a friend’s grad party (what’s with the cheesy smile?). Apparently the only way I knew how to tame my hair in the summer was with a lot of crunchy looking gel…oops :).

Do you remember the end of your senior year of high school? I remember getting handfuls of grad party invitations, and throwing half of them away. Everyone was so excited, so innocent (ignorant?).  This time around, I am not roaming the hallways with handfuls of invitations, or passing out senior pictures  (for the record, I even figured out the whole hair thing, too 🙂).

I am, however, sending out announcements. I am announcing my accomplishments, as I feel everyone is entitled to do, and should :).

Snail mail

Last night, after a little 8pm vent session (aka- crying in the car) with my boyfriend, I started to feel better about the whole growing up thing. After reading all of your comments, and talking to my boyfriend, I began to realize that this is something that all of us go through, it’s just a matter of how we handle it. I am working on embracing change, but I have to be realistic; it is not going to happen overnight.

After last night’s breakdown, I was pleasantly surprised to receive not one, but two packages in the mail. Lately, the only mail that I have been receiving are my “warning notices” for students loans (since I graduate and will have to start paying soon- yay 😉), so a package is always warm welcomed.

The first package was from Chelsey. I won her giveaway a couple weeks back, and was excited to open the box of goodies!

Homemade muffins, along with some healthy snack food! I received two Larabars, but ate one halfway through work today. My company had a booth at the Health and Wellness Fair at my school, and after manning the booth all morning without a break for lunch, I was in need of something to eat. Thank goodness I always pack a snack in my purse :). The bar was chocolate cherry, one of my favorite combos! Thank you, Chelsey!

I received the other package from Jenn, an Arbonne consultant.  Lauren received Arbonne’s protein powders from Jenn awhile ago, and I wanted to see what they were all about. I was in contact in Jenn, and she sent me three packets of the protein shake mix.

Two chocolates, and one vanilla. I plan on using these in my smoothies very soon, and will be back with my thoughts. Arbonne prides itself on being “safe, pure, and beneficial”, which is one of the reasons I was drawn to the website after reading Lauren’s post. Check out Jenn’s site for more Arbonne products. I know I have my eye on some cosmetics, and skin products; my bathroom drawer could use a good makeover for spring :).

Tonight’s agenda includes an online exam and more homework.

That would be my, “I’m so tired; can’t I just pretend I don’t have anything due so I can eat dinner and go to sleep?,” look. Someone’s gotta do it though, and I suppose it must be me.

Don’t rush your life away

For as long as I can remember, I have been rushing my life away. If I was nine, I wanted to be thirteen. If I was thirteen, I wanted to be eighteen. If I was eighteen, I wanted to be twenty-two.

Now that I am twenty-two, I want to be eighteen. While I was busy wishing my life away, life happened.

Lately I have been having weird dreams. Sad dreams. Scary dreams. There have been fires, floods, and deaths. Not exactly a “good night’s sleep.” I don’t know if it’s because I am six class days away from being done with college, or if it’s because I have been awake, over-analyzing my life into the midnight hour, every night. Either way, it’s a little discomforting.

Along with these nighttime dreams come nostalgic daydreams. I knew I was reaching my breaking point when I found myself crying in my room over Julie’s wedding posts. Reading her touching moments made me remember my own.

When did I exchange my hot pink tricycle for a two-door sports car? When did I exchange my Cookie Monster sippy cup for a flowered teacup with matching saucer? When did I leave childhood and enter adulthood?

In three weeks, I will walk across that big stage to receive my diploma.

And I’m scared.

My feelings, exactly.
